White Chocolate Holiday Bark

Happy December everyone! And with the first of December comes the first post in the series of 25 Days of Treats! Every day from now until Christmas I will be posting treat ideas that are easy to give, package and ship as gifts from your kitchen. Feel free to email me with things you'd like to see. Here we go!

This recipe is actually what helped inspired the idea for the 25 Days of Treats. As most of you know, Christmas is right around the corner and yesterday being the first day of Advent, it was only more real. I need to get moving on our Christmas gifting. With making, packing and shipping, this is going to be a big job.

So yesterday I was watching television and they were making a white chocolate bark. I love white chocolate bark because it is so easy to make. And realizing I had quite a bit of white chocolate left as well as some remaining goodies from Thanksgiving I threw them all together and made a fun and festive bark. Great for any get together and look great with other small treats flanking the bar.

White Chocolate Holiday Bark

Ingredients:
16 oz good quality white chocolate, finely chopped
1/2 tsp Cointreau (or any orange flavored liquor)
1/4 c. dried cranberries
1/4 c. golden raisins
1/2 c. walnuts, chopped

Directions:
-Line small baking sheet (mine is about 8x11) with parchment.
-In double boiler or a glass bowl over a pot of simmering water, add white chocolate, Cointreau and heat slowly, while stirring, until melted and smooth.
-Take off of heat and stir constantly until beginning to thicken.
-Pour white chocolate onto parchment and spread out.
-Evenly distribute cranberries, raisins, and walnuts over the top of the white chocolate, pressing lightly to make sure all pieces have adhered.
-Put baking sheet aside and let rest until hardened, about 2 hours at room temp.
-Take parchment out of baking sheet and using a large knife, cut into 3 inch wide vertical strips and then each strip into triangular pieces.

These can be served immediately or stored in containers for up to a week.

Inspired by a Barefoot Contessa recipe.

Yum! I love the addition of Cointreau - does the flavor come out well? I just might have to start adding more liquor in my holiday candies. I've only done it in my chocolate truffles so thanks for the reminder!

Yum, that looks good! I'm looking forward to your future posts. Do you have any suggestions on how to package your homemade food gifts, especially if you want to give people a variety of cookies in different shapes and sizes? Thanks

I made this tonight and it turned out great! I didnt have raisins so I threw some semi sweet chocolate chips on and it was really good. Also, I realized that my cranberries were orange flavored, so I didnt need the orange liquor at all. Thanks for posting this.
