Apple Spice Cookie Bars

I made these bars for a weeknight meeting. It was perfect weather for these little bars as we met outside where it was a bit chilly. Perfect for fall. The apples make these bars very moist and keep them that way. The slight taste of spice and the soft bite of the cookie are perfect for any autumn event. I will definitely be making these again. Probably tomorrow, even!

Apple Spice Cookie Bars

Ingredients:
2 c. plus 2 Tbsp all purpose flour
2 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon
1/8 tsp nutmeg
1/8 tsp allspice
small pinch ground cloves
1/2 c. butter, melted
1 c. packed brown sugar
1 c. white sugar
2 eggs
1 Tbsp vanilla extract
2 apples, cored and diced (a little less than 2 c.)
cinnamon sugar for sprinkling

Directions:
-Preheat oven to 350 degrees and line 9x13 pan with foil and baking spray.
-In medium bowl, combine flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
-Whisk to combine well and set aside.
-In bowl of stand mixer, combine sugars and butter and beat on medium high until light and fluffy, about 1 minute.
-Add eggs, one at a time, beating well to combine.
-Add vanilla extract and beat to combine.
-Turn mixer on slow and fold in flour mixture a little at a time until just combined.
-Fold in apples.
-Spread mixture evenly into prepared pan and sprinkle top generously with cinnamon sugar.
-Place in oven and bake until cooked through, when top slightly bounces back to the touch, about 30 minutes.
-Remove from oven and let cool completely before removing from pan, cutting and serving. (bars will be very soft)

Those sound A-mazing and I will be making them very soon! What kind of apples did you use?

I used gala b/c that was on sale for the cheapest, but because you just dice it any kind will work well. Granny smith and local crisp apples are great baking apples.

Hi Katie!
This may be a silly question, but I am planning on making these bars tomorrow for company and I'm not sure if the recipe calls for light brown sugar or dark brown sugar?
Thanks!!

Thank you so much for this recipe. These turned out awesome. I'm making them for a Breast Cancer Awareness bake sale. I'm going to attach a little note that says something to the effect of "An apple a day is a good start. Early prevention is key."

Lynch said...

whoops, I mean early detection is key.

Lynch - what a GREAT idea! I love it! GL to you!

Sorry if dumb question...did you peel the apples?

Lola said...

I am making these tonight..can't wait!

shannon - not a dumb question at all. I don't, out of PURE laziness. But you definitely can if you don't like the skin pieces. :) hth!

I baked these yesterday...maybe it was my oven but it took almost an hour to bake. Did I do something wrong? When I combined the sugars and melted butter they did no fluff up like the recipe said.

sandy2008 said...

I made these last night...it must be my oven too b/c I baked for a little more than 30 minutes and after they cooled they seem undercooked and raw tasting :(

I'll try again and bake for up to an hour if needed...

These were delicious! They were the first dessert I made for my husband after we got married (we got married one month ago). He brought them to work the next day and they were gone within 20 minutes.
