Juicy Strawberry Scones

A special surprise for breakfast this morning, scones are my husband's favorite and these strawberries were just calling my name. The fresh strawberries are so juicy, you have to increase the flour content a bit. But after they cook, the juicy bite you get from the fresh strawberries are unbeatable! So good on a lovely spring morning.


Juicy Strawberry Scones

Ingredients:
2 1/4 - 2 1/2 c. all purpose flour (depends on how ripe your strawberries are)
1/4 c. granulated sugar, plus extra for sprinkling
1 Tbsp baking powder
1/4 tsp salt
1 stick (8 Tbsp) butter, chilled and cut into small pieces
1 egg
1/4 c. yogurt
1/4 c. milk
2 tsp orange zest
1 c. fresh strawberries, diced

Directions:
-Preheat oven to 350 degrees and line baking sheet with parchment
-In small bowl, combine egg, yogurt, milk, zest, whisk to combine thoroughly and set aside.
-In large bowl combine flour, sugar, powder, salt, and whisk to combine.
-Using pastry cutter or two knives, cut butter into flour until all pieces are smaller than pea-sized.
-Add strawberries, and toss to coat.
-Add wet ingredients to dry and mix in lightly with fork until dough just comes together.
-Turn dough out onto well floured work surface and pat into large ball.
-Cut dough in half.
-Shape half of dough into flat disk shape and cut into 8 slices.
-Place on baking sheet and repeat with other half of dough.
-Sprinkle tops of scones with sugar and place in the oven.
-Bake until turn slightly brown, about 25 minutes.
-Remove from oven and let cool on baking sheet for 10 minutes.
-Transfer to a wire rack and let cool (or eat right away!)

Is it safe to assume it is a 1/4 tsp. salt not 1/4 c. salt?

Haha. Yes. I guess that's what happens when I write and proof my recipe in the same go-round. Thanks for saving future bakers from that horrid mistake! :)

Hey Katie! So I gotta ask, how crumbly are these?! They look great. Love the strawberry touch.

Not really crumbly. If you want a crumbly scone I'd recommend the orange currant scones I have on here. when you use fresh ingredients (rather than dried) you get a more biscuit-like scone. Dried ingredients help yiled a more buttery traditional scone consistency.

When you have the dough in the flat disk shape, about how thick should it be? (P.S. I love all your recipes-just made the strawberry hand pies yesterday and they are amazing!)

Aww, I'm so glad you liked them! As for the thickness, it honestly doesn't matter much..it just depends on the size you want the scones. Flatter and longer or thicker and shorter. That's all. Mine was maybe 1 1/2 in. but that's totally a guess.

oh katie you are my hero. I have tried and failed several times at making strawberry scones ( they came out way to mushy and not so attractive) So I was trilled when I saw these on your blog! They look so perfect and delicious. I am making these right now lol. Thanks!

I came across this blog post on a search for strawberry scones. I just made these, ate two and now am letting you know they turned out great! I followed the recipe to a t but I did paint the scones with egg before I sprinkled the sugar on the top.
I want to eat more! Can't wait until morning.
