My father-in-law (Daddy D!) always makes this mac and cheese recipe and my husband has certainly picked up in his place. While I normally shy away from anything velveeta, this is one of my indulgences. It is so smooth and creamy I can't help but eat more than one portion (often 3 or 4!).

Daddy D's Creamy Shells and Cheese
Ingredients:
-2 lbs. of shells (we prefer Barilla)
-1 large block of velveeta cheese
-1 stick of butter
-1 1/3 c. 2% milk
-2 tsp garlic salt
-plenty of ground pepper
Directions:
-In an extra large pot 3/4 full of boiling water and a large pinch of kosher salt, add shells and cook until just past al dente
-Meanwhile, chop block of velveeta and butter into 1 inch cubes
-When pasta is done, drain, rinse and toss with a bit of hot water and put back into pot.
-Toss in velveeta, butter, and 2/3 c. of milk.
-Gently fold in ingredients until beginning to melt and becoming creamy.
-Add garlic salt and as much ground pepper, to taste, as desired (we like a lot).
-Slowly add the remaining 2/3 c. milk until desired texture is reached.
-Serve and enjoy!
Let me warn you, this recipe feeds a LOT. When my husband cooks he says he likes leftovers, but I have a feeling he thinks we have a family of 16 because he cooks way to much!
Oh, and look at the GORGEOUS grilled chicken he made with it! Yum!!

It's so fun when husbands cook! You should have yours read Bourdain's Kitchen Confidential or Buford's Heat... my hubby has read both and they've made him way more interested in cooking.
anonymous - actually, I have kind of always done it the same way thanks to the parents I guess. On the weekends I will sit down and go through the local store(s) specials and plan my meals for the week around the items on sale. Then I write down all the things I need for those recipes and make one trip to the store. I also keep a small white board on the wall in the kitchen where I can write things down as I run out, like milk, paper towels, soap, etc. I add those to the list before I go.

OMG, that chicken looks so yummy! and that mac-n-cheese is absolutely not fair. Totally looks worth the stomach ache though.
