Blueberry Scones

My husband loves the scones at Starbucks. I always think it is such a waste because they are so much cheaper to make and frankly, they are much better fresh. So when I offered to make scones for him, as I usually do, and he agreed, I was delighted. I love making scones. They are so simplistic and so yummy! I was also very happy to practice because I am throwing a baby shower soon where the mom-to-be requested lots of scones. Haha.

Well, I think they turned out pretty well. I mean, it's hard not. But the icing on the cake was when we were walking out the door this morning and my husband said, "Did you pack me my scones?" Ooops! So I ran back into the kitchen and he yells, "I want two!!" Haha. It's the little things in life...


Blueberry Scones

Ingredients:
2 c. flour plus 2 Tbsp, plus 1 Tbsp
1 Tbsp baking powder
3 Tbsp sugar
1/8 tsp salt
6 Tbsp butter, plus 1/2 Tbsp, chilled
1 Tbsp vanilla
1 c. half and half, chilled
2/3 c. fresh or frozen Maine wild blueberries

Directions:
-Preheat oven to 425 degrees and line a baking sheet with parchment.
-In small bowl combine frozen blueberries and 1 Tbsp flour and toss to combine.
-Place blueberry mixture back into freezer.
-In large bowl, combine flour, baking powder, sugar and salt.
-Take butter out of fridge, cut into chunks and add to flour mixture.
-Cut butter into flour until pea sized or smaller.
-Add vanilla and half and half and mix in with a spoon until just barely incorporated.
-Take blueberries out of fridge and knead into mixture until mixture forms a ball of sticky dough.
-Turn dough out onto floured surface and pat down into rough 9-10 inch circle.
-Cut into 8 triangles and place triangles onto prepared baking sheet at least an inch apart.
-Take 1/2 Tbsp butter and cut into 8 small pieces.
-Place one small piece of butter on top of each scone.
-Place in oven and bake for 15 minutes.
-Let cool and enjoy.

What a wonderful blog you have.

As I get older and have less people at home, the less I cook. Your site makes me WANT to cook: "healthy" waffles, these scones, lemon meringue pie, angel hair pasta, mini twice baked tates - just to name a few. And all of these are on your first page.

Yes.. I usually want to try to make stuff for boyfriend for breakfast. He loves the chocolate muffins at giant's. and I'm like-- that's not a muffin, it's a cupcake, even though it's under muffins. and I still haven't gotten it right. agh! but love that you have the same theory as me-- it's cheaper and tastier when you make it.

I'm learning to cook and I can't wait to try and make these. My sister made some banana nut chocolate chip scones this past weekend and they were REALLY good.

I loved the scones!!! DH was not as fond, but all his co-workers loved them too. I was glad that I made them yesterday because DH came home and needed something to take for Easter brunch at the hospital.

Normally I do not like scones- but man normally they do not have so many yummy looking blueberries in them either! I can tell you that by looks alone- you been Starbucks already. :)

I made blueberry scones for the first time in my life, using your recipe and they came out just like the ones from Starbucks! I took them out of the oven like 5 min ago...
I had to have one still warm and although they are good when cold, it tasted heavenly. I know I got it right!

Later edit: after they cooled down I realized I had to cook them some more - they were too soft.Maybe because of the huge frozen blueberries I used. So I put them in the oven again for 15 min or so until they got brownish spots, like yours. And then they were fabulous!

I just made them because my husband also love Starbucks scones. I didn't have 1/2 & 1/2 so I used vanilla creamer & didn't add vanilla or sugar. They came out good! I'll try to make them again w/the right ingredients.
