Angie's Famous Strawberry Cupcakes

I have a great coworker who makes these "famous" strawberry cupcakes. Everyone knows her and the fact that she makes these amazing cupcakes. Well I begged her for the recipe for them because I'd love to make them and share. Well the next week she comes in with a copy of her recipe for me! I was shocked, and honored and SOOOOO eager to make them! So here it is...the most amazing cupcake recipe ever.

Just in time for Valentine's day. These are also great with dark chocolate frosting. Enjoy! :)



Angie's Famous Strawberry Cupcakes

Ingredients:
2 1/2 c. cake flour
1 tsp baking soda
1/4 tsp salt
1/2 c. unsalted butter
1 1/2 c. sugar (or a little less)
2 eggs
1/3 c. buttermilk
1/4 c. oil
1 tsp vanilla extract
2 c. chopped strawberries

1/4 c. strawberries
1 Tbsp. strawberry liquor
1/2 tsp lemon juice
8 oz. cream cheese, room temp
1 1/2 sticks unsalted butter, room temp
1 3/4 c. powdered sugar
1/2 Tbsp vanilla

Directions:
-Preheat oven to 350 degrees and prepare 2 cupcake pans.
-Sift flour, salt, and baking soda in medium bowl.
-In bowl of mixer, cream butter and sugar until fluffy.
-Add eggs one at a time until combined.
-Add buttermilk, oil and vanilla until combined.
-Add flour mixture and stir until just combined.
-Fold in berries.
-Fill cupcake pans 3/4 way.
-Bake for 20 minutes.
-For frosting, put berries, liquor, and juice in saucepan.
-Bring to a boil over medium heat and then reduce to a simmer for 5 mins.
-Let cool then blend until smooth.
-In bowl of mixer mix cream cheese and butter until creamy.
-Add sugar, then vanilla.
-Add berry puree until smooth.
-Frost cupcakes when they are completely cooled.

Oooohhh I went to a baby shower today but didn't make it over to the assorted cupcakes tray early enough to get a strawberry one. Now I'm oh so sad.

I just finished baking these and... OMG!!! They're sooooooo good. Moist, yummy, delicate... I'm speechless!! \^o^/

If I hadn't made these for a house warming party tomorrow, I think I could eat the whole batch by myself (and I got 30!!).

They're so amazingly good that I'm not even ashamed for keeping a couple at home {U_U}

how many cupcakes can you get out of this recipe? i'm making them for a wedding shower of about 25 people. do you think i should double the recipe? thanks! love your blog! i just made the spinach artichoke dip last night, and it was like a food orgy in my mouth (those were the first words i could think of when i took my first bite)!

I am excited to try this recipe- and I would like to try them tonight. I do not however have any strawberry liquor! Do you think the recipe would be as good without it?? And what is the best source to purchase liquors? Is the Booze store the only legal place to purchase this? Thank you for all of your yummy recipes that you share and for any info you could provide?

Made this for my daughter's 5th birthday as a two layer cake and it was awesome. The frosting is perfect for cup cakes and was a little soft for cake decorating, however it tasted delicious and the cake was completely consumed at the party.

Next time, I'm going to try it with 1/2 cake flour and 1/2 all purpose to see if produces a denser cake.

Wow. These were really delicious. I made them last night and brought them into the office today, and everyone absolutely loved them! I kept the frosting separate to let people frost them on their own, and everyone had a great time digging in. Thanks so much for the wonderful recipe!

I made these last night for my 4 year old's Valentine party (sans strawberry liquor...just seemed like a bad idea!) and they were fantastic! I doubled the recipie and got a couple over 3 dozen cupcakes. I brought some into the office and they were gone by 9:15!!

This recipe sounded so awesome, I decided to bake the cupcakes for our church service tomorrow. I normally bake goodies for church every Sunday, everything fresh and from scratch. A friend of mine who likes pink and strawberries has a birthday coming up, so I made these for her. The icing is to die for, although I substituted strawberry jam for the liquor. I should've only filled them halfway though, I hate the way mine almost always overflows. Your cupcakes look way better though. The pink on that icing is almost supernatural.

I made this recipe over the weekend for our daughter's birthday. They are so good! I left out the liquor(we didn't have that) and added chopped strawberries to the frosting instead. Wonderful!
