Lubyee bi Laham (Green Bean Stew with Lamb)

Okay, I KNOW the pictures don't emulate what I am saying, but this is seriously my favorite meal EVER. Lubyee is a Lebanese tomato-based stew made with fresh green beans and slow cooked lamb. Even people who don't like lamb love this meal becuase the pieces are SO tender it literally just falls apart (hence the ugly pictures)!

It is served over rice but I tend to just eat it by itself and then put rice onthe plater after I'm finished to sop up the yummy sauce. It's simply delicious and that's the best explaination. Oh, and please note, that I usually make a double or triple batch of this becuase I eat a lot and I love leftovers. :)

Lubyee bi Laham

Ingredients:
1 1/2 lb fresh green beans
1 lb lamb meat in chunks
1 Tbsp butter
3 med. onions, sliced
2 c. water
1 1/2 c. fresh tomatoes or 4 1/2 c. tomato sauce
1 tsp salt
1/2 tsp allspice
1/2 tsp black pepper

Directions:
-In a large dutch oven/stock pot sear sides of the meat in 1 tablespoon butter.
-Add onions and brown.
-Wash green beans and string.
-Add 2 cups water and tomatoes to deglaze the pan and salt and allspice and pepper.
-Cover and simmer for approximately 1 1/2- 3 hours or until lamb is tender.
-Add string beans during last hour.
-Serve over rice.

I have GOT to make this! But I have one question: what cut of lamb do you get for this? Would boneless chops work?

Wow. Made this dish last night and it was just outstandingly delicious! The lamb came out melt in your mouth tender & I love the simplicity of the recipe. I served ours over orzo but found it to be just as satisfying by itself.

My boyfriend & I both went back for seconds, which we almost never do. Thanks for turning me on to a meal I have a feeling will be in frequent rotation in our house!

I make a recipe very similar to this but with okra. However, I have an abundance of fresh picked green beans so I can't wait to try it with them. :-)
